The 'rattle' and 'bell' designations reference the tendency of these chilies to loose their seeds which rattle inside a Dried Cascabel when shaken. The Cascabel has a woodsy, acidic and slightly smoky flavor with tobacco and nutty undertones.
The Cascabel Chili is best used in sauces, pastes, stews, tamales, and tacos.
